The Story of Caribbean Specialty Foods. By: Rachael Ackley (owner/president)
Located at the Randall Estate, Providence Pt. Water Island, St Thomas USVI:
Caribbean Specialty Foods is a small business owned and operated by Rachael and Floyd
Douglas Ackley.
It all started in a small kitchen in the Caribbean year 2001.... Floyd made me some Fish Jerky
and I liked it so much I told him his delicous and wholesome creation should not be kept a
secret hidden away on a Caribbean island. Everyone should enjoy this stuff!
Then.... in 2002, Caribbean Specialty Foods was formed, by myself and Floyd, originally under
the name Caribbean Dried Foods. Our intentions were to produce a line of dried products
ranging from "Fish Jerky" to "Dried Carrots"(Carrot Candy). Unable to limit our creative minds
to only producing dried products we decided to go with a more broad range name, and create
a full line of sauces, oils and rubs, as well.
Now married we work side by side, a husband and wife team. Floyd, born and raised in San
Diego California, had always been a food guy since he was young and was inspired by some of
the most influential chefs of this era. In California: Claude Segal, (Mamaison, Spago, Biarritz
Cafe.) and in Hawaii, Carl Diebold, (Bistro on Kapiolani, Le Tournedos). He has extensive
experience in food service and retail markets through a series of family owned convenience
stores, where marketing, buying, and promotions were his specialties.
I am a computer specialist, accountant and computer graphic designer, that comes from a long
line of excellent cooks on my mothers side. I was born in Tortola the British Virgin Islands, so I
am a local Virgin Islander (as dey say in de Islands "A Belonger").
With a team like ours and always a sharp eye out for new talent we think that Caribbean
Specialty Foods' products have a good shot at being on the shelf at your local grocery store.
So keep your eyes open for the logo and your palate ready for a flavor of the Caribbean. Ask
your store manager today!!
